
We probably all have our own idea of what makes up the perfect hodge-podge. But it’s basically vegetables in cream. Beyond that, it is kind of up to the individual.
First, you really need fresh, new vegetables, all of which seem to be available at the moment. New potatoes, green beans, yellow beans, peas of some type and carrots are all a must. Some people add in turnip. And there are lots of variations.
A bit of bacon can add a nice flavour. And really, a little is all you need. Although I’m not sure there is such a thing as too much bacon.
Some people also like to add some onion. And once I have my initial feed of veggies and cream, I might add in a few other things, just to mix it up. I like to add a little garlic and maybe some basil every now and then.
But those fresh garden vegetables are the star, and should be.
Like a lot of things, hodge-podge is one of those local favourites that I have to have every year or things just don’t seem right. The time has come. I need to check that one off my calendar.
