Did you know that even though the week after next we’ll be celebrating Pancake Tuesday with the round little treats, that early Europeans would celebrate Groundhog Day with pancakes as well?
Candlemas, as it was known before it became Groundhog Day was the halfway point between the Winter Equinox, the first day of winter and the Spring Equinox when “the sun would return” and so the golden brown circles (pancakes) represented the sun.
By the way, it’s hard to believe that the movie Groundhog Day came out 30 years ago. It seems like just yesterday.
