I doesn’t seem to take much. A couple warmish days and a bit of sunshine and all of a sudden things seem to be popping out all over.
Just this morning I noticed a couple trees trying to make their leaves come out. And there was another little surprise I noticed. The rhubarb is trying. It hasn’t become full fledged rhubarb just yet, but there are little nubs that hope to become rhubarb soon.
I mentioned the other day that I look forward to certain foods appearing this time of year. Fiddleheads are always a big spring favourite. I don’t eat the dandelions, but I know some do. But rhubarb is one of my favourites. Probably just because it appears early.
It is one of those things that seems to be one of the first things in the garden each year. I happened to check last night, mostly because I was just checking on things like a nearby forsythia, which is also fairly early, but isn’t showing much sign of turning yellow just yet. But while checking on that, I looked down. And there were those little nubs.
They might not look like much now, but I have plans for those nubs. Plans that involve turning it into stewed rhubarb or rhubarb crisp or baked in a pie or… there are a lot of things you can do with rhubarb. And it just happens that I enjoy eating many of them.
So bring on the sunshine. I’m getting hungry.
